Thought I’d share just a couple of photos of fishes caught around my home town of Darwin NT, Australia. I’ll add more as time permits.

Ken Going To Work…

Mmmmm, not really not anymore, this is about as hard as it gets these days, taking by ‘Webster Twinfisher’ for a run. At 61 I realize there are just a few short years left, my advice… If you can stop work at 60 or at least slow down and enjoy life. The money is not as good but sure is less stressful counting fish, than counting dollars.

Two nice size Queen Fish, great for making ‘Numus’, chili, diced onion, lemon,vinigar, sugar. Slice thin and cure for about 10 minutes. Mmmm!

 

 

 

Giant Trevaly

 

 

 

 

 

 

 

 

 

Giant Trevaly. Caught after a 30+ minute battle on light line 6KG, then released unharmed back into the wild waters. I estimated the fish to be around 30KG as I had to use both hands and a lot of effort to lift it from the water for a quick photo shoot.

 

Black JewFish

 

 

 

Here is a recent photo of your scruffy author [me] with a Black Jewfish caught just out of Darwin harbour.

Cooking: No other food overcooks as easily as seafood be it fish or shell fish. Overcooking seafood will spoil its flavour and texture, and decrease the moisture content of the flesh.

Seafood should be cooked until it is almost done. It will continue to cook even after it is removed from the heat source, so should be removed a few minutes before completion of the cooking time.

I always cook my Black Jewfish fillets one of two ways:

1. I cut the fillet thinly, bread crumbed and lightly fried in olive oil for around a minute either side.

2. Cutting a piece of fillet to meal size, leaving it nice and thick. Crush 4 cloves of garlic into a fry pan, add a good sized serve of butter, heat until melted then lightly fry the fillet until cooked. Usually 3 to 4 minutes either side.

Some folk prefer to head the fish and cook whole, I am not a big fan of this method with Black Jewfish as they are mostly to large to fit in the standard oven. I guess if you do prefer baked whole fish, you could cut one into large chunks and bake those.

If you thought about going swimming in Darwin harbour??? Well maybe best think twice, there’s not that many of these around as the Crocks ate most sharks! Then you also gotta watch the stone fish and box jellyfish. Always check with fisheries if you visit Darwin especially in the wet season when the box jelly fish are thick in numbers… They do kill!

 

Juvinile Marlin

 

 

 

 

 

 

 

 

 

I had the pleasure of being the first to catch a Marlin in Darwin Harbour.

I’d been out fishing all day, 9 hours, looking for Sail Fish. Returning home without a strike and pow! I could not believe my eyes when I saw this baby swimming on the surface at the mouth of Darwin Harbour.

I quickly rigged up a mullet bait then after a couple of trolling passes, bang!

I’ts only a baby, but was a thrill. Fish was released without harm.
